It respects the flow of sap, so that the vines remain balanced, in better health, especially in the face of wood diseases.
This technique also gives the plant every chance of finding its strength and vigor to provide fully ripe grapes for the next harvest.
Pruning is a long winter job, which keeps the winemaker on his toes for an average of two and a half months.
